This is probably one of the easiest recipes I have ever made and I was pleasantly surprised with how delicious it turned out. I walked into the grocery store and just browsed around the baking aisle (happens often) looking for something I could bake, but that would be healthy. I did not find much until I stumbled across a package of miniature graham cracker crusts!! I have never even seen miniature graham cracker crust before and immediately the creative sparks started flying! Well, I love “rich” desserts and rich wine so one of my favorite cheat meals is wine and cheesecake. However, today I decided to keep it healthy and instead I made these adorable miniature cheesecakes that are sooo delicious while staying light!

Healthy Mini Cheesecakes

The cheesecake filling part of this literally took me maybe 90 seconds to mix up and throw inside the graham cracker crust. This would be a perfect little healthy dessert to bring to an event or party, if you are cooking for just yourself or for two, a recipe to make with kids, or if you are dying for something sweet, but are sticking to your nutrition.

Here is what you need:

  • 1 Package of Mini Graham Cracker Crust
  • 1 8oz Container of Whipped Cream Cheese
  • Vanilla Extract
  • Baking Stevia (it’s just regular stevia but in bulk)
  • Liquid Egg Whites

Alright, here is how simple it really is to make just 1 Serving or 1 Mini Cheesecake (If you are making for multiple people then you would just double, triple, or multiple these serving sizes by however many people you are baking for, but this one is just for yours truly 🙂

Step 1: Pre-heat oven to 375 degrees

Step 2:  Combine 2Tbsp of Whipped Cream Cheese, 2 Tbsp of Liquid Egg Whites, 1 Tbsp Stevia, 1tsp of Vanilla Extract in a mixing cup and use a fork to mix it all together as smoothly as possible.

Step 2: Pour cheesecake filling into 1 mini graham cracker crust

Step 3: Bake for 15-20 minutes or until golden on top

Step 4: Cool in fridge

Step 5: Eat it all! 🙂

It really is that simple! I had trouble coming up with all the steps because it basically is just throw all the ingredients in a cup and mix it then pour and bake it! Yum!!

I topped my mini cheesecake off with some Fat Free Reddi Whip! Yum!

Here is the exact nutrition it is actually right UNDER 200 Calories so you could splurge and add some mini chocolate chips or fresh strawberries if you wanted to!
