THE BEST HEALTHYI know at first glance it might have looked like some greens with ice cream on top drizzled with chocolate, but it is actually one of the best salads I have ever had and probably one of the best ones you will ever have too! Plus, it is so incredibly healthy packed full of lean protein, healthy fats, and a whole lot of delicious flavor! 🙂

If you have been receiving articles and recipes from me for any amount of time then you know that at night I usually swap out my carbs for healthy fats just because I get most of my workouts in either in the early morning or early afternoon so my body doesn’t need the carbs so much in the evening or at night. You can do the same if you usually work out earlier as well…so carbs and proteins in the first half of the day then protein and fats (plus veggies) in the evenings.

Anyways, I say that because this salad is packed full of delicious and healthy fats that are so good you will not even know that you are eating a healthy prepared meal!

Here is what you will need:

Mixed Greens (As much as you would like)
Sliced Mushrooms
Sliced Onions (red or white whatever you prefer)
2 Slices of Lean Bacon (The real deal bacon, I went with a generic brand that was 50 calories for 2 slices)
1 Whole Egg
1/2 Cup Extra Lean Ground Turkey
Sliced Tomato (Optional)
Crumbled Goat Cheese (This is very low in sugar)
Balsamic Glaze or a Light Balsamic Dressing

Step 1- If the Extra Lean Ground Turkey is not cooked then go ahead and cook all the way through on the stove top until there is no pink.

Step 2- Place mixed greens in a Salad Bowl and in the mean time start to Fry up those delicious slices of bacon

Step 3- Sautee Mushrooms and Onions in skillet with just some non-stick spray (no oils) Once, finished place sautéed veggies on top of the greens.

Step 4- When bacon is finished place on paper towel to soak up the extra grease and to cool.

Step 5- Fry up one whole egg (the yolk is part of your healthy fats). Cook the egg however you would like! I did over easy so that way the delicious goo would count kind of as a dressing on the greens.

Step 6- Crumble bacon and place on top of greens with the veggies, place fried egg on top of greens, add 1/2 cup the cooked lean ground turkey, and add sliced tomato

Step 7- Add a dash of crumbled goat cheese! Mm!

Step 8- Drizzle with Balsamic

Step 9- Devour and Enjoy! 🙂

I believe in eating your food intuitively so that means I do not count calories I go for healthy choices and nutrients that my body needs so I do not know the exact caloric number for this salad, but I DO know that it is packed full of healthy fats that your body needs and loves and these are actually the fats that burn fat. I also know you will get your necessary protein intake around 25-30g in this meal to keep you full and satisfied PLUS getting tons of greens into your meal.

It really is that simple to make and I eat this salad probably 2-3x a week because it feels like a cheat meal it is just that good!! So I hope it helps you enjoy dinner that feels like a cheat while actually staying on track with your nutrition! 🙂
